Chicken Mushroom Soup with Leeks
Around Thanksgiving, I went downstairs and discovered we had a whole fryer down there. Last year, Andy made Chicken Leek soup (minus the mushroom since I didn’t like them last year). On Saturday when it was so cold, we decided this soup would warm us up. Here is the recipe (it says four servings, but I think for 2 people, we’ve had about 3 meals off of it):
3 tbsp extra-virgin olive oil
chicken (we put about half the fryer in, I like chicken)
1 large leek, white part only, trimmed and chopped
2 cloves garlic, peeled and minced
3 sage leaves
Pinch of Nutmeg
1 1/2 pound mixed fresh mushrooms (I would say half this much or even just half a pound)
2 qt low-sodium chicken broth
2-3 tbsp of dry sherry
1 tbsp cornstarch mixed with 2 tbsp water
Chopped parsley
In large soup pot, heat 1 1/2 tbsp oil on medium heat and saute chicken 3 or 4 minutes or until opaque (we just stuck the chicken in the roaster for a couple hours while we were doing a puzzle). Remove chicken from pot and add remaining 1 and 1/2 tablespoon oil, leek garlic, sage, and nutmeg. Cook until leek is soft, 2 or 3 minutes. Transfer mixture to a small bowl and set aside. Add mushrooms to pot and cook until golden brown. Return chicken and leek mixture to pot, salt and pepper to taste and saute about 4 minutes. Pour in broth and sherry and bring to simmer. Add cornstarch mixture and simmer for about 3 more minutes. And your done.
The mushrooms were a little much. But I love this soup in the winter because its different from the same old chicken soup.
