Chicken Parmesan Strombli
Since we had half a fryer left, Andy decided to make this taste dish. We had bought a bag of frozen bread dough a couple months ago so we had some on hand. Here is the recipe:
1 pound boneless skinless chicken
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons olive oil
2 cups shredded mozzarella cheese (about 8 oz)
1 jar pasta sauce (we used roasted garlic just depends of what you are in the mood for)
2 tablespoons grated Parmesan cheese
1 tablespoon parsley
1 pound fresh or thawed frozen bread dough
If thawing the bread, the bag says only 5-8 hours outside the fridge, count on about 10 hours. Anyways the recipe– Preheat oven to 400 degrees. Season chicken with salt an pepper. In skillet, heat oil and brown chicken (ours was already cooked from the roaster and that works as well) . Remove chicken from pan and let cool; pull apart into shreds. Next, in a medium bowl, combine chicken, mozzarella cheese 1/2 cup-1 cup (Andy thought 1/2 cup wasn’t enough) pasta sauce, Parmesan cheese and parsley. Set aside. After this is done, on a greased jelly roll pan (which I have–got as a wedding gift) press dough to form 12 X 10 inch rectangle. Arrange chicken mixture down center of dough. Cover filling bringing one long side into center, then overlap with other long side. Pinch seam to seal. Fold in ends too. Arrange on pan, seam side down. Bake 35 minutes or until cooked and golden. Cut into slices. Heat remaining pasta sauce to dip.
I would have a picture but this time it ended up looking really crappy. Andy put in toaster oven which was a mistake. It ended up burning the top. Use actually oven or have a bigger toaster oven.

Wow this sounds excellent! I tried making this tonight and added some asiago for flavor which turned out very nicely! Thanks so much for posting this recipe! It was a big hit!
